Pasta carbonara with pancetta
Instructions
1. Heat the olive oil in a skillet pan, add chopped into fine strips pancetta (or slightly smoked bacon), add pepper and lightly roast it. Mix eggs, grated pecorino cheese and parmesan, a little of black pepper, whisk with a fork until smooth.
2. Boil the pasta (the best brands Barilla or De Cecco) in salted water according to the instructions (usually no more than 8-10 minutes) to the state of al dente. During cooking, add some water (about half a cup) from pasta to the pancetta.
3. Throw the spaghetti in a colander to drain the water and add it to the bacon. Mix well, remove the skillet pan from the heat. Pour in the egg mixture to the pasta with constant vigorous stirring. Add another amount of grated cheese, stir again and serve.
